As our team prepared to bring the magic of DeLille to Seattle, the goal for our new menu was the same as ever: blending world-class wine and food to bring people together to make memorable experiences.
Led by Head Chef Eric Anderson, the En Ville team has developed a menu that brings this vision to life through dishes inspired by thoughtful pairings and an intentional balance of texture, flavor, and restraint. “We see the kitchen as we do the craft of winemaking—a celebration of our region where excellence is pursued, stories are told, and joy is created and shared,” says Head Chef Anderson.
A focus for the team was finding the right local partners and utilizing the freshest ingredients that they could provide, based on the season. By keeping sourcing local, we honor the PNW fare, uplift other local businesses, and create dishes that pair well with our wines, which were also grown right here in Washington state.
The DeLille En Ville experience is centered around the idea that good company enhances a delicious meal. The culinary team wanted to ensure that, like a great bottle of wine, dishes could be passed around and shared among friends. Many of the dishes, from salads to shareables, promote this style of dining, allowing guests to try a little bit of everything.
