Biography

The DeLille En Ville Kitchen is supported by Sous Chef Sean Kramer, who joined DeLille in the summer of 2025 for the opening of our University Village location. Having spent his entire life in and around kitchens, Chef Kramer brings extensive experience to our culinary team, coupled with a drive to experiment and deliver unique, yet exceptional food that takes the DeLille En Ville experience to another level. 

A native of the PNW, Chef Kramer was born in Seattle and raised in Bothell, often in the back of his parent’s pub and grill where he first experienced restaurant life. At age 14, his parents opened a pizzeria in Everett, and he excitedly joined the line, kickstarting a culinary education that continued through a program in high school. A visiting chef there provided his first job outside his family’s restaurants at Russel’s in Bothell, where he spent two years as prep and dishwasher. 

After graduation, Chef Kramer transitioned to a role as Line Cook at a pizzeria in Woodinville, before moving to a larger scale corporate kitchen at Maggiano’s Little Italy. Here he learned to operate at a much larger scale, while maintaining speed and consistency to provide an exceptional guest experience. After a few years, and ready for a smaller, more creative environment again, Chef Kramer returned to local restaurants, ultimate landing at the Woodblock in Redmond. Working alongside Chef Heather Hiltl, he progressed from line cook to Sous Chef over the next five years.  

In 2021, Chef Kramer was offered the opportunity to work with Chef Jason Wilson at The Lodge at St. Edward Park. “Working there taught me finesse, and the balance of executing at a high level in an often pressure-filled environment,” he says. “I knew I still had a lot to learn, and it was a high caliber restaurant where I could do that.” After Chef Wilson’s departure, Chef Kramer also moved on, spending time at the Lake House in Bellevue and Darkalino’s in Pioneer Square before joining the DeLille En Ville opening team in summer of 2025. 

Working alongside Chef Hiltl once more, Chef Kramer is excited by the challenge of creating a French-style bistro for DeLille in University Village, where he can combine his experience in lager kitchens while still maintaining creativity and a sense of experimentation to deliver something unexpected.  

Chef Kramer lives on the Eastside, and enjoys traveling, with Monterey and Santa Cruz being among his favorite destinations.
