The 2021 Grand Ciel Cabernet Sauvignon is a powerhouse of a wine that effortlessly shows off its beautiful intensity and concentration. The nose slowly showcases aromas of wild blackberry, Bing Cherry, hoisin, and tobacco leaf. The chocolaty palate has seamless, chalky tannins engulfed in clove flavors, green olive, cinnamon stick, and a hint of fresh Lilac. There is a lot of energy in this rich, textured effort that exudes elegance and precision. The lengthy finish is focused and has great purity of fruit with a savory edge. Drink now with a proper decant or cellar as long as you can wait.

The 2021 ‘Grand Ciel’ comes from the DeLille estate vineyard on Red Mountain. Anise, tar and dense dark fruits all line the nose. The palate is very rich and loaded with texture. Turkish coffee, creme de violette, anise and shades of huckleberry all combine on the palate. Dense and chewy with a seamless mouthfeel, give this an hour of air if consuming now. Tasted three times over three days. Drink 2024-2042

2021 Grand Ciel Cabernet Sauvignon
Grand Ciel Cabernet is a single vineyard, single varietal and single clone Cabernet from our estate vineyard on Red Mountain. Every detail of our vineyard has been designed to produce the highest quality fruit from the unique climate and soil of this prestigious AVA known for ripe and structured Cabernet. Our rigorous selection process only permits a small portion of grapes to become part of Grand Ciel wines.


Winemaking
Cold soaked 24-36 hours, fermented 14-16 days on skin, aged 20 months in 100% French oak (100% new) and aged in bottle 18 months prior to release.
