The 2021 Minuit is quite showy on release, with blueberry compote, charred meats and dark roast coffee dancing from the glass. The wine has great weight and intensity, while the polished, broad tannins round out the mid-palate and lead to a lengthy finish. The significant (54%) new French oak sits nicely in the background, offering touches of vanilla and caramelized sweetness, while lifting the blue fruits that dominate the wine’s profile. This effort will evolve beautifully over the next 12+ years if you choose to wait.

The 2021 DeLille Cellars ‘Minuit’ Red Wine combines Malbec (70%) with the remainder Cabernet Sauvignon. This shows good poise and richness offering sagebrush and anise notes alongside rich dark fruits and loads of chocolate. The palate has good richness and bright underlying acidity, as you are greeted with herbal accents that line a core of dense dark fruits, with copious minerals. Drink 2024-2040

Behind the Wine
2021 Minuit
Minuit was crafted via countless trial iterations of Malbec and Cabernet Sauvignon at the blending table, seeking unity and balance. Meaning “midnight,” it is the time of day that delineates one day from the next, at once the beginning of something new and the end of a defined and fundamental cycle. This wine, black as night, embodies this notion: the conclusion of our journey in the vineyard and cellar, and the beginning of discovering the wine’s potential in the bottle and in the glass.

Vineyards
Quintessence Vineyard on Red Mountain – Originally this Malbec and Cabernet Blend was a Member-Only selection made from 100% Quintessence fruit. It became such a favorite that we added select blocks from the famed Red Willow Vineyard to expand case production.

Winemaking
Stainless steel fermented, 14-16 days on skins. Barrel aged 20 months in French oak. Bottle aged 18 months prior to release.
