The 2022 Delille Grand Ciel Cabernet Sauvignon opens with a luminous inky center that fades toward a crimson edge, immediately showcasing its youthful vibrancy. Crafted from the winery’s Red Mountain estate vineyard, this Cabernet is finely structured, capturing the essence of its site. Aromas of marionberries, crushed violets, espresso bean, and cassis rise from the glass, followed by layers of blackberry liqueur, licorice root, charred stone and that amazing Red Mountain sagebrush that weave seamlessly across the palate. There is a graceful interplay of richness and tension, with polished tannins anchoring the wine’s impressive depth. Notes of black tea and smoldering herbs emerge on the finish, carrying energy and poise. For pairing, it would shine alongside a slow-braised short rib with porcini mushrooms and truffle polenta, where the earthy depth of the dish matches the Cabernet’s complexity. Highly recommended.

Grand Ciel Cabernet is a single vineyard, single varietal and single clone Cabernet from our estate vineyard on Red Mountain. Every detail of our vineyard has been designed to produce the highest quality fruit from the unique climate and soil of this prestigious AVA known for ripe and structured Cabernet. Our rigorous selection process only permits a small portion of grapes to become part of Grand Ciel wines.
Winemaking
Single Clone Cabernet (191) from DeLille Cellar's Estate Vineyard on Red Mountain. Stainless steel fermented, 14-16 days on skins. Barrel aged 20 months in French oak (100% new). Bottle aged 18 months prior to release.
