Celebrating the 30th Vintage

The 2021 D2 shows the promise of the vintage, with deep concentration and outstanding quality. Initial aromas of blackberry, cassis and green peppercorn lead to a palate bursting with beautiful richness and texture. The high-quality, fine-grained tannins of this wine allow approachability in its youth, yet have the firmness and backbone to provide aging for 15+ years. Red currant, Bing Cherry and toasty oak flavors develop with time, leading to a lengthy finish with impressive weight. Cheers to 30 vintages of D2 and many more on the way.

D2 was one of the original DeLille releases from the winery’s first vintage (1992), and this commemorates the 30th anniversary. It’s a classic Bordeaux blend of 58% Merlot, 34% Cabernet Sauvignon, 4% Cabernet Franc and 4% Petit Verdot, and seems to have been given the same exceptional care as the winery’s top wine Chaleur Estate. New barrel aging provides a bright, forward frame of toasty oak around blackberry and black cherry fruit. Along with the barrel spices are streaks of savory herbs and black olives, coffee and iron filings. This could easily be the reserve level wine at many wineries; here it represents excellent value. Butternut Squash Risotto with Black Truffles

This is a very cool dish because it is vegetarian, yet the cheese and truffles bump it up to a red wine pairing. It is perfect with the DeLille Cellars Merlot-dominant D2. For the carnivorous, add a short rib on top. Vegetarian or not, everyone is happy. Do not fear the truffle. As with many things, they are available on the internet for most of year.
