2021 Discovery Cabernet

The 2021 Discovery Cabernet Sauvignon has an alluring bouquet of blueberry compote, black plum, and violets combined with an earthy, graphite note that seamlessly intertwines with all the intense fruit aromas.  The mouthfeel has luxurious texture, with impeccable balance between supple tannins and bright acid.  The use of new French oak offers intriguing flavors of mocha, vanilla bean and a baking spice medley.  The purity and sense of place this wine exhibits made it an easy decision to let this effort stand alone.  Enjoy this single vineyard expression now, with a decant, or cellar for 12+ years.

DeLille has been sourcing from this site in the Horse Heaven Hills since 2012. The 2021 ‘Discovery Vineyard’ Cabernet Sauvignon offers pipe tobacco, anise and gravel accents alongside a core of rich blackberry fruits. 2021 Discovery Cabernet

The reputation of DeLille Cellars has been built on the art of blending and a passion for crafting wines that combine different varietals and vineyard sources into seamless expressions of Washington State terroir. However, certain lots are so exceptional that we choose to showcase them as single vineyard and varietal bottlings, as reflected in this limited offering of Cabernet Sauvignon. Perched above the Columbia River, the picturesque 40-acre Discovery Vineyard is rapidly gaining reputation for growing some of Washington’s best wine grapes. For this cuvee, barrels were carefully selected to showcase the inherent varietal flavors typified by the Horse Heaven Hills AVA.

Winemaking

Single Vineyard Block. Stainless steel fermented, 14-16 days on skins. Barrel aged 20 months in French oak (75% new). Bottle aged 10 months prior to release.
