2021 Shaw Cabernet

The 2021 Shaw Cabernet explodes with massive fresh fruit flavors that lean towards the darker side on its release, due to the nature of the warm vintage.   Initial aromas of plum, dark cherry, and black peppercorn emerge from the glass, with pretty red fruits like fresh raspberry and cranberry soon following.  The palate is luscious and seems almost creamy because of the smooth entry and tannin quality.  There is an elegance and vibrancy to this wine that should not be missed.  Give yourself time with this one as new layers surface with patience.  Can be cellared 15+ years.

Aged in 90% new oak, the wine gains complexity from maturing in barrels from several different coopers. It’s deep, dark and concentrated, steeped in black-cherry, dark-chocolate and espresso bean flavors on snug, fine-grained tannins. Best from 2027. – James Suckling

Behind the Wine

2021 Shaw Cabernet

Each year the Washington wine industry chooses an exemplary vintner and grower from amongst its peers. The 2015 honor went to Shaw Vineyards and DeLille Cellars, spanning more than 50 years of combined experience as vanguards of Washington’s wine industry. To acknowledge this tribute, we selected some of our finest barrels of Shaw Vineyards Red Mountain Cabernet Sauvignon for a limited production wine exclusive to our wine club. Now, we’ve opened this wine to everyone, so that all can taste the product of our most beloved partnership. Wines from here are bold and hedonistic with magnificent purity of fruit. Enjoy a glass as a classic example of the stellar wine lineage of Washington State.

Vineyards

Located in the northwest corner of Red Mountain (known as the ‘canyons’ area), this sun-drenched vineyard grows in the steep, rocky slopes facing due west.

Winemaking

Single Vineyard Block. Stainless steel fermented, 14-16 days on skins. Barrel aged 20 months in French oak (90% new). Bottle aged 10 months prior to release.
